A vegetable stew

  • 1 28oz can Diced tomatoes
  • 1 Large onion
  • 3 tbsp paprika
  • 2 tbsp chopped garlic
  • 1 cup vegetable broth
  • 3 medium potatoes cubed
  • 8 oz mushrooms quartered
  • 1 medium carrot diced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper


  • Dice the onion and carrot and sautee in olive oil until the onions are translucent.
  • Add the garlic and sautee for another minute.
  • Add the broth and tomatoes and spices. Stir well to mix in the spices.
  • Add the mushroom and potatoes. Cook for one hour covered on low. Stir occasionally.
  • Goulash is done when the potatoes are cooked through.
